Honestly, either one is fine, since I'm mostly interested in the egg moves.  A male will work just as well, since I have a decent ditto.

 

Does a 5IV female Zubat with 28 in Defence be ok (egg moves: Brave Bird, Zen Headbutt, Steel Wing)?

Non shiny.  I just want something to breed the 0 speed IV onto a Honedge.  If you have any breeding leftovers from back then, I'll take them.  Gender doesn't matter, since I have good Iv parents of both.
