Similar gym format to Reborn and Rejuv: Desolation, Spork, Full Moon.

Desolation is currently at 5 out of 16 gyms. It has field effects and the level cap.

Spork is currently at 11-12 gyms* out of 18. It doesn't have field effects or a level cap.

Full Moon is currently at 11 out of 18 gyms. It has field effects but not the level cap.

*it's an unofficial release of ep 4; sprites after the 11th gym are not fully complete yet

A note about Full Moon is that it's often criticized for the forced and rushed romance. I personally didn't enjoy that aspect of the game as not only do I not like the character the game romances you with, I like girls so having a boyfriend in the game is awkward for me. I also didn't like the backstory behind the romance, which comes after this character has bullied the player for years. However if that doesn't bother you, there are other parts of the game you might enjoy. I personally think the mapping is well done.

Of those three, Spork seems to be the easiest (after the first gym, which is the one most people struggle with the most) while Desolation seems to be the hardest. Desolation and Full Moon have death similar to Reborn and Rejuvenation, while Spork's story is lighter than the canon games, as death literally doesn't exist in Spork.

I think Apex has a very interesting and unique story, although since you're not necessarily looking for Reborn-level difficulty, that may be a downside for you, as Apex's difficulty is extremely brutal at times. It also has a limit of 3 party Pokemon instead of 6, which the game doesn't tell you about.

Insurgence is often praised for its gameplay mechanics. It has delta Pokemon (similar concept to SM's Alolan forms), custom megas, Secret Bases, among other things. Higher difficulty modes have a level cap while lower ones don't. There's a light and dark story mode. IIRC, you have up to the first gym to decide which difficulty and story modes you want.
