Normal egg = normal pokemon. Shiny egg = shiny pokemon. As simple as that.

I've got Ralts with Shadow Sneak, and the Nature can be fixed at 7th Street. IVs are mediocre though, and it's definitely not shiny. Message me if you are interested.

Inkay is found headbutting trees in the Byxbysion Wasteland, but that's after Shade. Out of the top of my mind, Hoothoot learns Hypnosis and you find him really soon, straight out of the Grand Hall. If i were you, i'd just get a pair of Dark pokemon like A-Raticate and Skuntank and just blast the gym.

How would you rate the various eevee evolutions? The good ones, the viable ones and the bad ones? I've got some eevees to evolve

Off the top of my head, i remember Porygon2 with held item Eviolite and Porygon-Z with ability Adaptability to be pretty good. Then there is Snorlax, Bouffalant, Furfrou and Silvally that i remember to be nice.
