I recently finished the postgame while on the zekrom path (I think) and I'm tempted to go back and play through again and go for the anna smiles ending. However I don't particularly want to spend the time leveling/grinding pokemon and making teams to beat the pokemon battles. I've already beaten the game, I've already gotten my enjoyment out of that part of it. I just want to see/read the different dialogue and plot developments on the different paths. Are there any mods that just let you skip battling?

You can open the EvOverflow.rb file in Notepad, or any text editor. Line 26 is the part of the code that updates the iv of your pokemon. You can either change it from +=1 to +=10 or something else. Or you should be able to just change it to =31, and then it will set the value to 31 directly.

Do you mean you have to go find oases in the desert again in order to enter the Mirage Tower a 2nd time? For me, I found 3 oases in the desert that disappeared after I touched them, and then I was able to enter the Mirage Tower. I've never had to find another oasis to get into the tower since, or had any other trouble entering the tower.

You could reset to an earlier save, if you haven't played too much since handing in the Unfezant. You can find an eviolite in the underwater houses.

Personally, I prefer Fire punch for Blaziken over Flare Blitz. Flare Blitz is a lot stronger, and should absolutely be used in any competitive/online battle, but during the story, there are many trainers to face in between heal points. It's super annoying to have to heal up your blaziken after every random battle if it takes a bunch of damage from flare blitz, and sometimes the nearest Pokemon Center's are super far away. Definitely agree on bulk up over brave bird though. Speed boost + bulk up completely solos luna, and many other battles, which you also can't do if you use flare blitz over a non-recoil move. For dragonite, DDance is better than wing attack, since flying isn't a great type offensively, so you don't lose out much by dropping the flying STAB, especially because you'll almost always want to use outrage anyways, which would hit just about everything as hard as wing attack would - Super effective wing attack is 180 BP, unresisted Outrage is also 180 BP. Fairy is an exception with dragon immunity, and the only other type that resists dragon, steel, also resists flying, but you have fire punch for that. So unless something is 4x weak to flying (Bug/grass, bug/fighting, grass/fighting, not a lot of pokemon, and all would also be weak to fire punch). Basically wing attack is pretty useless when your other moves are STAB outrage, and fire punch, and DDance is super strong. Rock tomb isn't available until later, and you won't get the TM for bulldoze until after Charlotte.

At a certain point in the game, you can find "link stones" that when used on pokemon act as if you had just traded them, so using one on graveller will evolve it into a golem.

Is it possible to skip the hatching animation at all?

Just wanted to point out that you may not want to use seismic toss on Blissey until much later, it deals a fixed amount based on your level, which right now is not that high. As for calm mind you can get it from Radomus on a previous episode, but the TM is removed when you update to E18.

What do you mean Gen 2 starters have Mega Evolutions? They just don't

I don't know if being able to softlock yourself counts as a bug, but in the area near the wispy tower with the Espurr, if it's following you, you can softlock yourself above the pumpkin near the tables. Maybe add a dialogue option to send the espurr away, or change the scenery to prevent softlocks? I only saw it happen once to a streamer, but it could be possible to softlock yourself with any of the following pokemon events.
