That is just cause you haven;t used it a lot yet, trust me, you stop targetting minions by accident once you use it a bit lol.

I target minions by accident anyways >_>

I struggle with projectiles mainly, single-target stuff is equally bad no matter what I do >_<

With Skill shots, just aim in the vague direction you wish it to go, will have to get a feel for the range by playing it though. ((I am kinda good at skill shots, so never had that problem.)) and just work on it, you will get better the more you play, just don;t give up and practice.
