Just managed to beat Dark Souls 2, and with that I've beaten all 3 games. Screw Ancient Dragon, though.

@Wolfox 1. It really depends on what is your cup of tea, so to speak. All three games were challenging in my opinion at least. While I definitely had my moments of frustration, the only thing/boss I skipped (for now) was Ancient Wyvern in Dark Souls 2. There are no unbeatable enemies, even if you're inclined to think that way from time to time.
While Dark Souls-games are known for their difficulty, that's not all there is to them- item descriptions and talking with NPCs reveal quite a lot about the lore/story. Some people actually compare Dark Souls and Monster Hunter: both games require you to memorize patterns of enemies/bosses or otherwise you get annihilated. While this might be true, I've had quite extensive experience in MH and yet in Dark Souls I'm still a scrub - or a "casul".
2. From what I understand, Rapiers are considered one of the best weapons. They're fast and each attack doesn't cost that much Stamina.
@Combat Tell me about it. I decided to skip this boss
Spoilerand go for Vendrick without the last Soul of a Giant
