TBH you don't need great IV's for beldum to beat the fairy gym Now to answer you question, make sure one of your pokemon is holding a destiny knot. This item passes on 5 of the 12 possible IV's down to the child. Keep doing this until you are happy with the child. If the IV's on your ditto are bad, there is a good chance that you will get bad EV's on your child with the destiny knot. So its up to you if you want to use the destiny knot or try and get extremely lucky

First gym is a struggle beacuse of the abilty Aftermath on her voltorbs/electrode There was one strategy I used which is cheesy but got the work done

Yeah her togekiss does some work on you if she manages to get rid of your toxicroak I would try getting a stealth rock user at the bare minimum for the massive chip damage If not someone could trade you a pokemon that you think would help you win

1. Agate Clown Indra is probably the best place to train. If you are feeling confident, the grand hall trainers are your go to but they have mons 80+ 2. You need to get to the 8th floor of the obsidia department store, additionally you can buy EV erasers in the new shopping center at peridot 3. Best way to EV train is to use the Power items and kill lots of pokemon under the railnet. If you don't need speed on that pokemon (noibats and swoobats give you 1 speed EV) , then you can go buy another speed eraser 4. There are plenty of walkthroughs on how to get beldum to replace your noivern. Also there is an online trade system now which you can use with other trainers. Honestly EV training will make your team considerably stronger and you should be able to beat the gym with your present team
