Because of the toxins(?) in onions. The odour they emit is so penetrant that it just stays with you for some time. I can't even begin to count the number of times I washed my hands afterwards. So basically, they mess with your eyes but also with your hands
Yeah, it's properly awful. But onions go with a lot of dishes and they taste very nice, so I have to use them. There are probably useful kitchen utensils for it to make it easier to cut, but I just have to use my hands for now
