I wonder if it is possible to know or change the nature of the pokemon that I was born from a breeding egg.

No you can't know/change the nature of the egg til you hatch it but you can use an everstone to inherit the nature of the parent holding it to the egg.

When to cross two pokemons does the father have to be holding an everstone?

You can change the nature of any pokemon in the pokemon psychiatrist in 7th street. Just remember to save before changing the nature so you can soft reset until you get the right one.

You can change a Pokemon nature but the NPC for that is only available by the time you have 8 badges.

The Pokemon with the nature you want to pass needs to be holding the stone.
