It's not how it works in the regular games, and after testing, it is only the last pokemon, meaning you're sitting there facing a trainer with no pokemon until you select a move. I'll edit the pictures in in a second.

If a trainer's pokemon switch in to stealth rock and die, You still get to select and use a move while there is no enemy pokemon.
Targeted moves fail (But there's no target!) while things that require no target such as sticky web/stat boosts work fine.
Not 100% if it's just last pokemon or not as i cannot fully remember which pokemon it was, but it has happened multiple times. I'll work on getting pictures.
It also does NOT work in reverse, meaning if you die to stealth rocks, it just whites you out.
NOTE: My skamory had roar to ensure it died to stealth rocks.
Sleep talk does not target correctly on certain moves.

Realisation that acupressure may be the issue.
The setup is rather peculiar, and i think the effect is due to it always wanting to target "Target 1", as this has happened in both singles AND doubles battles:
EDIT: It dawned on me that acupressure being a target select may be the bug, and not sleep talk itself, as it is supposed to target self and ally only.
I have a Drapion with Knock off, Rest, Sleep talk and Acupressure.
Singles:
If Sleep talk chooses Rest, it works normally, as it is a self-target no matter what.
If Sleep talk chooses Knock off, it will always target the enemy as normal, as they are the only target.
If Sleep talk chooses Acupressure, it will target THE ENEMY POKEMON, despite there being no choice when the move is used. I assume it's going for "Target 1", as there is a choice instead of being a self-buff only in doubles. (not sure why but maybe a carry-over?)
Doubles:
If Sleep talk chooses Rest, it works normally, as it is a self-target no matter what.
If Sleep talk chooses Knock off, it will always target the FIRST enemy, bypassing any choice as it was through sleep talk. (I assume this is normal, as it works like that in the pokemon series)
If Sleep talk chooses Acupressure, it will also target "Target 1", ignoring the second enemy, any allies and myself. (In the pokemon games it targets self at all times)
This leads me to believe it'll happen for any move that can target any pokemon, it will always choose "Target 1" through other moves (such as sleep talk, metronome?).
I can understand why it happens but it unfortunately ruins my setup, as i can't sleep talk buff myself because every acupressure just goes on the enemy.
