Does anyone know if you can see the shiny pokemon in your pokedex or is it once you evolve them you no longer get to see that shiny pokemon?

So I'm new to this forum, but hi I'm Jared. I started the game at the last update and though I didn't get far I still liked that file. I recently updated the game and for some reason I can't get to my old file. I have saved that file on my laptop and am wondering if it is possible to get it back. Thank you
