Because Dragons are more oft seen as villains in a stereotypical fairy tale whereas Fairies as seen as good. And Good > Evil in said stereotypical fairy tale.
Sir Lancelot was raised by fairies to be a dragon slayer. And "Fairies tales are important not because they tell us dragons exist, but that dragons can be beaten".
